In 1912, chemist Louis-Camille Maillard discovered the reaction between amino acids and sugar that browns bread, sears steak, and deepens a roast. It's the difference between food that's cooked and food that's good. We named the café after it because that pursuit of pushing every ingredient just to the edge of caramelization is the whole point.
